Here we are again at Mang Isko's Kitchens. Inday's Kitchen is visiting Mang Isko's Kitchen :)
Turon is a sweet and delicious snack among Filipinos. This has been a fave since I was a kid. We actually used to sell this. My mom cooks and we sell them. Selling time was around 1-3PM. It wasn't too hot before. We can go around the neighborhood. Sold them fast and we came home with pride. We get to eat more if we sell a lot!
Now, I only get to eat it when I am around Filipino friends. Someone always brings this as a pot luck and we feast on it. I miss the gatherings now because of Covid but thanks to Mang Isko's recipe, we can get to try this at home. So hope you will enjoy this recipe and come back for more.

Hello guys! We are back at Mang Isko's Kitchen. Our guest cook is making Pancit Bihon! I mentioned last week about pancit which is one of Filipino's popular dishes so here it is. This is different from the regular pancit but both are equally yummy. Instead of egg noodles, vermicelli is used here. Thinner noodles than the regular pancit.

Today's Lunch: Greens with chicken strips, a bit of lite thousand island dressing and chopped almonds with dried cranberries and raisins.
I am back again in healthy. This time, it is greens on my menu. I bought recently some almond chops in packs which were on sale. Just mixed it with raisins and dried cranberries and I eat them as snacks. And they're perfect toppers for salads.
This won't really fill me up so I eat 5 times in a day. Small portions of meals though. No rice and just healthy food. I cook brown rice sometimes if I am craving for rice.

Here is an easy deviled recipe without the dijon mustard. My kids don't really like it. So I omitted it and only used the remaining ingredients listed on recipes website.
10-12 pcs eggs; 2 tbsps mayonnaise; 2 tbsps apple cider vinegar; salt and pepper to taste; paprika
Boil the eggs for about 20-25 minutes. Let it cool and peel each. Then cut in halves, remove the yolks set aside egg whites.
In a bowl, add all ingredients to the yolks and mix until creamy. Scoop out using a spoon and fill egg whites with the yolk mixture. Sprinkle some paprika before serving. Enjoy~

I was originally planning to cook tacos for tonight but the taco shells went bad. Bummer! So instead, we use tortilla chips.
I added some shredded cheese and warmed it. Add some chips and tada!!! Chips with Beef and Cheese Dip. The beef was seasoned with taco seasoning. Kids love them so we are good for dinner tonight.

Giys I am addicted to this!!!
Everytime I go to the store, I always end up buying 6-8 pieces of sweet potatoes or yams. But we like the former better. Not to sweet and they are really good when baked as wedges. Kids love them so I always make them for snacks.

Here is a very easy dish if you have left-over ingredients.
Here, I used a 16 oz pack of frozen mixed vegetables which contains green peas, carrots, green beans and corn kernels. I cooked them according to the package instructions. If you will use a microwave, you just have to place the vegetables in a microwaveable dish, add a tablespoon water, cover with a cling wrap and microwave for 6-7 minutes. Set aside.
Another ingredient is the left-over chicken meat. We had a rotessier chicken the other day so I just shredded the meat and warm it up with the other ingredients. For seasoning, I use "Better than Bouillon" which really makes food taste yummy. It is a paste that is made of chicken broth. A teaspoon is equivalent to a cube of bouillon or a small can of chicken broth. It is a fave of mine! It is organic and I got it from Costco.
Cooking the ingredients are easy. You just have to add a bit of olive oil or any oil, heat the meat and add the veges. They are all cooked so you are just warming them up and add seasoning since the veges are not seasoned yet. Serve and enjoy~

This is Alaskan Pink Salmon Fillet in Sweet Teriyaki Sauce. It was pre-marinated when I bought it. It was like $7.99/lb but got it with 30% off discount. I don't buy fish it it is not on sale or no discount. It is really expensive here. Regular price is $9.99-$10.99 a lb.
Anyway, I baked the fish for 30 minutes or so until golden brown at 450°F. Served with brown rice and mixed veges with chicken meat. Yum!

Another family favorite dish. Baked Chicken Egg Rolls! We also call them lumpia. Lumpia shanghai are smaller and thinner and mostly made of ground meat and so flavorful.
- With baked chicken egg rolls, ingredients are precooked so this is really a quick and easy recipe.
- I used left over chicken breast from Costco's rotisserie chicken, a 16 oz pack of frozen diced carrots and peas-cooked as directed on the package, 1 tbsp seasoning without msg (Costco's less sodium boullion), 1 tbsp minced garlic, 1 tbsp onion powder, 1 tsp black pepper and a cup olive oil for coating.Youtube Video
- On a skillet, use cooking spray or a tbsp of olive oil; heat pan over medium heat. Add all ingredients; cook and stir until heated through. Set aside and let it cool a bit.
- Then spoon 1/4 cup chicken mixture on the bottom third of triangular shape egg roll wrapper; fold sides toward center and roll tightly. Keep remaining wrappers covered with a damp paper towel to keep them moist. Place seam side down on a a tray. Repeat in every roll.
- Preheat oven at 425°F. Arrange rolls on a tray, seam side down. Brush egg rolls evenly with olive oil (both sides). You may also use cooking spray. Bake for 10-15 minutes or until lightly browned.
- Serve with sweet chili sauce or with any of your favorite dipping sauce. Enjoy~

Paksiw na Isda: Swai Fish fillets in a pot filled with a cup of cider vinegar, a cup of water and plenty of pepper corns, 3pcs whole crushed garlic +garlic powder 😁
Add all ingredients and bring to boil. Simmer until cooked around 20 minutes or more until half of the juice has evaporated. Make sure there is still juice left.
I used no salt but this tastes good already. Juice is kinda sweet. You can add soy sauce or salt to make it tastier. Enjoy~

I highly recommend this recipe!!! I found one on recipe.com but I used salt-free seasoning and added a little garlic powder, no salt. My daughter really loves them and I am making some again. I just bought 8 pieces of yams and sweet potatoes.
The slicing takes time but it is a good exercise for me. I get to sweat at least😁 2 big yams or sweet potatoes is enough if you are slicing them in quarters then thin pieces. You can also slice 3 pieces of yams or sweet potatoes, in half lengthwise and make wedges. Bake in the oven at 400°F for 30-40 minutes.
Here are what you need:
3pcs Sweet Potatoes or Yams
1/3 cup olive oil
1 tsp pepper
1 tsp salt (i used salt-free seasoning, you may also use italian seasoning)
1 tbsp garlic powder (you may use rosemary)
1 tsp chili powder (optional) if you want a bit of spicy taste
1- Preheat oven at 400°F. Cut the potatoes lengthwise into quarters, then cut each quarter lengthwise in half again. This will make 8 wedges. You may also cut these crosswise in half to make smaller wedges.
2-In a bowl, combine olive oil, salt and pepper and the remaining ingredients. Toss the wedges and mix. Make sure the wedges are evenly coated.
3-Arrange the wedges on an oven-safe tray. Bake for 30-40 minutes. They cook easily so don't burn them.
4-Serve with your favorite dipping sauce or ketchup.

I wanna share my favorite cheese snacks of all time- Cheese Balls!
My kids love these too but since it is not healthy, they only get to eat these during parties.
When I was a kid, I remember munching to a similar snack that we call Sweet Corn Snacks. It was sweet and salty and I have been craving for it. We don't have that kind here in America and the closest I could get which is kinda similar to that taste but not sweet are these Cheese Balls. I love cheese so, this became a favourite.
