Chocolate-Covered OREO Cookie Cake

Oh this is really yummy! I made this on my son's 2nd birthday party and they loved it! The cream cheese here can't even be tasted and the taste of whipped cream and oreo cookies? Delicious! I will be making it again and would love to have all my friends try it. It is so easy to make and it made me easier to prepare it because I used ready-made chocolate fudge frosting. I have semi-chocolate squares but I didn't use it. I tried it before and it was good. The problem is that I didn't have time to make the frosting, instead I just bought a can from the store. It was still good that it will satisfy your sweet tooth. I tried to use non or low fat, less or sugar-free ingredients. You better try making it, I am sure, everyone will love it and you will be praised! I got the recipe from Here it is!

1 pkg. (2-layer size) devil's food cake mix
4 squares BAKER'S Semi-Sweet Chocolate
1/4 cup butter
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
2 cups thawed COOL WHIP Whipped Topping
12 OREO Cookies, coarsely crushed

HEAT oven to 350ºF.

PREPARE cake batter and bake in 2 (9-inch) round pans as directed on package. Cool cakes in pans 10 min. Invert onto wire racks; gently remove pans. Cool cakes completely.

MICROWAVE chocolate and butter in small microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Cool 5 min. Meanwhile, beat cream cheese and sugar in large bowl with mixer until blended. Gently stir in COOL WHIP and crushed cookies.

PLACE 1 cake layer on plate, spread with cream cheese mixture. Top with remaining cake layer. Spread top with chocolate glaze; let stand 10 min. or until firm. Keep refrigerated.

My Son's CAR Birthday Cake

Hooray for this car cake! I got the idea from and I created my own version of a car. It was supposed to be a race car but it was easier for me to create any car. I wasn't aiming for a race car but any car that my cake will be formed. It turned up pretty for children's eyes and they even want to eat it right away. They wanted the part with M&Ms chocolate. It really played a trick. Try making this cheap cake and everyone will appreciate the effort you exerted on making it plus, it's not expensive and it's attractive for kids. Below is the recipe by Kraft. By the way, I used ready-to-use vanilla frosting.

1 pkg. (12 oz.) prepared pound cake
1 cup thawed COOL WHIP Whipped Topping
1/2 tsp. food coloring, any color
1 piece chewy fruit snack roll (5 inch), cut into 4 lengthwise strips
4 OREO Cookies
4 yellow candy-coated chocolate pieces
2 Tbsp. decorating icing, multiple colors

PLACE cake on cutting board; cut into pieces to resemble a race car.

TINT whipped topping with food coloring; spread evenly over cake.

DECORATE top of cake with fruit roll strips to resemble racing stripes and front grille of the car. Place 2 cookies on each side of car for the wheels. Place yellow chocolate pieces on front and back of car to resemble headlights and taillights. Draw windows on car and write the child's age on top of cake with icing. Use remaining icing to decorate cake as desired. Store in refrigerator.

How to Frost A Cake

If the cake is very soft and crumbly, apply a “crumb coating” to prevent cake crumbs from mixing with the frosting. Spread a thin layer of frosting over the entire cake, then let stand 5 to 10 min. or until frosting is set. Spread remaining frosting over cake.

Finger Gelatin

This is a perfect finger food for kids' parties. My son loves this. I prepared Raspberries gelatin on his birthday and he was really eating most of these aside from fruits. A few adults tried it too but mostly, kids are attracted to this. This is very easy to make. A nice addition to kids' menu in a party. Thanks for the idea.

3 pkg. (3 oz. each) JELL-O Raspberry Flavor Gelatin
4 env. KNOX Unflavored Gelatine
1 qt. (4 cups) boiling water

MIX dry gelatins and gelatine in large bowl; stir in boiling water until completely dissolved.

POUR into 13x9-inch pan.

REFRIGERATE 1 hour or until firm. Cut into small squares.

Prepare using your favorite flavor JELL-O Gelatin.

Fun Idea

Instead of cutting gelatin into squares, use cookie cutters to cut into assorted shapes.

Garlic Butter Shrimp

This is a very easy dish to make. My husband likes shrimp and he always boils it with creole seasoning, New Orleans' style. But I cook it differently which I have learned from my Father who cooks well. Back then, we used MSG as seasoning in Philippines but when I came here, I have never used it. So all the food I cook don't have MSG but still taste good. There might be in bouillon cubes but I don't use MSG directly. With this shrimp dish, I just used garlic salt, a bit of seasoned salt and pepper for seasoning and it tasted so good. The secret is lots of garlic which is sauteed on butter. Try it!
