Escabeche

Fish Escabeche is also known as sweet and sour fish. We usually use fried fish and just add sweet and sour sauce. This is easy to cook. I used catfish fillet because it doesn't really smell so badly when fried. Hubby likes it fried and he just eat it with tartar sauce. I like it with rice though especially when it has this sauce. First, you have to fry the fish fillets and set aside. In a pan, saute in oil the following: thinly sliced ginger (saute till golden brown), minced garlic, chopped onion, julienned bell pepper and sliced tomatoes. Cook the vegetables till tender-crisp then add the sauce. It's a mixture of 1 cup vinegar and half cup soy sauce with 2-3 tbsps sugar. Stir in sauce slowly, stirring occasionally till thicken. You may add a bit of cornstarch to thicken the sauce. Then serve with fish in it, topped with sliced green onions as your garnish. Perfect for any kind of rice.

Meal for today

Mung Beans with ham slices, anyone? Filipinos call it monggo and in our dialect, it's monggos. We usually like to cook it with coconut milk and that makes it more creamy. I cooked that way and added some ham slices. Also, I cook it sometimes with chicken meat and our favorite, with dried fish or smoked fish (tinapa). We eat it with steamed rice then. But I like it topped with chili paste. I was inspired by the Korean dramas whose characters always put chili paste or sauce on their bowl of food. They mix it and it looks so good! Well, I really like it too with the chili. Yay!

See's Candies

I haven't heard of See's Candies before until my fiance, now husband, gave me a big velvet red heart filled with chocolate in various flavors on Valentine's Day when I was still in Philippines. I was so surprised and happy at the same time! My co-teachers, friends and family were happy to get a taste of the popular See's Candies from USA.


That was really a very nice valentine gift, and it is not only good for Valentine's, See's candies can be a gift for all occasions. It would be perfect for business gifts too. I remember a client sent us a box for having us as their real estate agency, who helped them in buying their new home. Last Christmas, my family received a box as a Christmas gift and so on. Shrimp Linguine Alfredo

My favorite pasta aside from spaghetti! Actually, I love fettuccine Alfredo but since I ran out of fettuccine, I used linguine which is similar to spaghetti but flattened not round. Then I used the same sauce, the Alfredo sauce. Alfredo is my favorite white sauce. I have used it already with different pasta and all tasted so good. With linguine, I cooked it as how the package directions told us to do and mixed it with the Alfredo sauce. I then topped the dish with cooked shrimp, Parmesan cheese and a bit of ground black pepper. Mm mm so good!

Gold Bullion

I have been watching Koreas drama recently and I noticed that the characters in the drama have been using pieces of gold bullion as their treasure. They even keep the bullion in a safe or in the bank.


If you are currently watching Romance Town or City Hunter, you will know what I meant. With City Hunter, the main character is so rich that he loves to buy gold bullion. The same goes with the characters of the other drama, they buy bullion too. If I have the money, I will do the same thing. Gold is very valuable nowadays and it's a great investment. I need to learn more about gold as well as gold IRA. Who knows, in the future, I might be able to buy gold bullions too.

Spinach Egg Omelet

Spinach Egg Omelet is one of my favorite egg omelets. It is a simple but healthy dish for breakfast. Quick and easy to make. This is also a good dish to feed your kids if you want them to have vegetables. The spinach can hardly be tasted and the texture is nice. I really love it. I eat it with rice or just this alone with salsa or chili paste. It's really good. It is made of scrambled eggs and spinach without salt or any spices. I could have cooked it with tomatoes, onions or green onions and bell peppers.

Dried Fish and eggs

Weeee! It's Filipinos favorite especially for Filipinos who have lived far from home who can't eat dried fish always. Oh I miss it really! Thanks to a friend who gave me some dried fish from Philippines. I fried it and it was so crunchy and yummy. It's not the kind that is salty. These small dried fish were cut in half and dried it that way. So crunchy that you can also chew the heads. Ewww! But it's really good. We are used to eating it so it feels like heaven when you get the chance to eat it again! Perfect with rice, fried eggs and coffee for breakfast.

Show Tickets and More

As a mother, I have been so busy lately. Not only busy with my kitchen but also with work. I am working with my husband at home and looking after our child at the same time. It's nice to work at home though because you can take a break anytime plus you get to cook what you like for your meal. Hubby will not starve of hunger while at work. He is such a busy bee. That is why I told him to take a break at times. It would be nice for the family to go out and watch movies, shows or concerts.


Oh I miss concerts! Before we loved to go to concerts. It so happened that I saw some Taylor Swift Tickets online. I do love her songs and country music. I saw some Jersey Boys Tickets and
Harlem Globetrotters Tickets too. But I am not really interested with it. I like sports too, if only we could buy Yankee Stadium tickets. But we are too far to go and watch. Travelling will be a waste of time too for us for now but we do love to travel. Hope we can try the Fenway Park tickets someday too. Our boy is getting bigger! He would surely love sports.

Shrimp With Sweet Chili Sauce

I was inspired by Panda Express' new shrimp dish. So when hubby bought some packs of shrimp, I right away cooked it and added sweet chili sauce just like the one at Panda Express. Also, my friend, Ranilda cooks it that way and it is so good! Aside from the sweet chili sauce, I also added a bit of salt and ketchup. Just stir-fried it and shrimp is cooked quickly so I didn't cook it too long. Hubby and I love it! I ate it with rice while hubby made some burritos with it. Mmmm so good!

Save Money on Father's Day!

Yes, Father's day is just around the corner. And I am pretty sure that some of you guys are now thinking of gift ideas and things to prepare for Father's Day. Are you planning to throw a party for your Dad? Husband? or In-Laws? Or just thinking of a nice gift to give before or during a special dinner.

How I wish I could throw a party to my husband who will be again a daddy in two months time. But we are pretty tight financially as of now. A simple but special gift would be nice. I have a few things that I considered to buy him since he really needs these things so badly. My Dad also needs one thing from me which I really hope I could buy it for him. That's why I am broswing the net and looking for coupons so at least I can save. I saw some good deals at Savings.com. Hope I can find coupons for the things I need to buy for my loving husband and my dad. I really want to buy a GPS navigator for hubby and a hair clipper for my Dad.
