Lumpia Shanghai Filling

This is my lumpia shanghai filling recipe. I didn't have any lumpia or egg roll wrapper so I just ate it with cooked rice. This was an easy dish to cook since I used a lumpia shanghai mix by Mama Sita which I bought from the Filipino store. Though it took me a while to prepare the ingredients since I didn't use a slicer for the vegetables. The veges were diced well.

1 lb ground beef
2 pcs potatoes
2 pcs sayote
2 carrots
1 pack Mama Sita's lumpia shanghai mix
salt and pepper (optional)
soy sauce (optional)

In a pan or skillet, cook the ground beef till no pink remains (medium heat). Add the vegetables and cover pan. Stir occasionally. When veges are tender, add the lumpia shanghai mix. Simmer for a few minutes while stirring occasionally. You may add salt and pepper or soy sauce if you want it salty. Serve or wrap with egg roll wrapper and fry.

I Love Tuna!

Have you heard of a tuna omelet? What about fruity tuna-pasta salad? I bet you heard it but you just have not tried making it. I used to serve the fruity tuna-pasta salad to hubby and when he first heard it, he thought it was weird and not a good one. He tried tasting a bit and it wasn't bad. Below is a modified recipe from the other fruity tuna-pasta salad recipe.

1/4 of 1 package (7oz.) small shell pasta, cooked and drained
1 can (6oz.) tuna drained and flaked
1 large carrot, shredded
1/4 cup chopped onion
3/4 cup mayonnaise
1/4 cup milk
1 Tbsp lemon juice
2 tsp prepared mustard
1 tsp dill weed
1/2 tsp salt
1/8 tsp pepper


In a large salad bowl combine pasta, tuna, carrot and onion.
Combine remaining ingredients; whisk until smooth.
Pour over pasta mixture; Toss to coat.
Cover and refrigerate for 1-2 hours
I like best is the tuna omelet.When frying the scrambled egg, I just add the tuna chunks and roll it with the egg while frying it. Salt and pepper can be added to taste. It is easy and healthy especially to pregnant women like I was before. I see to it that I had seafood on my diet to get the good benefits that seafood can offer. They say it will harm the baby but I only eat in moderation. Seafood is still best and according to a scientific study, women who skip seafood during pregnancy could be putting themselves in danger for depression. This was just released and the findings show that seafood can really help prevent depression especially to women who just had a child. Postpartum depression can be minimized then and so women can raise their child without any problem. If you can't eat other seafood due to cost, you may use tuna which we can buy in cans. Cook it or prepare it in any way that will satisfy your taste. It is a
healthy tuna for your healthy self and baby! Oh I love tuna!

Ham And Cheese Omelet

This is hubby's ham and cheese omelet. This is his favorite omelet, quick and easy to prepare. He just fried the ham sliced in cubes then fried scrambled eggs with ham and cheese in it. He makes a big omelet that really makes me stuffed. With it, fried potatoes are served with filipino-style hotdogs which are served by filipinos during breakfast. It was a nice breakfast for us.

Egg Pie

If you are a fan of Leche Flan, you will like this egg pie. I like Lechen Flan too but it is too sweet for me. I like this pie better so I like to share with you too the recipe which is less in sugar than the regular egg pie recipe. I would like to thank my friend Florian for sharing this recipe. Enjoy then. 1 can evaporated milk
1 can condensed milk
7 egg yolks
2 whole eggs
1/2 cup sugar
2 tsps vanilla
2 ready-made pie crust

Heat oven; 350 deg. Mix all ingredients until blended, except the pie crust . Pour on each pie crust and bake for 45 minutes.

Healthy Tuna

One of the food that I craved when I was pregnant was tuna. I had been eating light tuna in cans almost weekly. I've read about the healthy benefits as well the harmful effects that seafood can give to pregnant women but I did give birth to a healthy baby boy. They say that I need to avoid big fish because of its high mercury content (like tuna, shark, mackerel, swordfish, tilefish) which can harm the baby. But I love tuna and it didn't harm me and the baby. Eating in moderation is important and it is still best to eat seafood during pregnancy. A healthy tuna for a healthy baby!

A scientific study was just released in which the findings show that women who skip seafood during pregnancy could be putting themselves in danger for depression. When I started my pregnancy, a lot of people would remind me not to eat seafood especially the raw one. But I had tuna most of the time
. They mentioned about tunas since I had been buying cans of it. I like making tuna sandwiches and sometimes just eat it with rice. I used to buy Philippine tuna products which are flavored and taste good with rice. All I have to do is heat it and dig in. With the tuna sandwich, I like it with mayonnaise, salt and pepper. Avoiding it may not satisfy me so I did eat it in moderation. This is to satisfy my craving and to get the enough health benefits it can give to both me and the baby.

What's for Breakfast?

I woke up early again today and can't go back to sleep. So I made a quick breakfast for myself and the baby in my tummy. I was craving for filipino hotdogs so I grabbed some from the fridge and cooked it. I also had a Kraft cheese which tastes the same with the cheese we use in Philippines. I took a bun and put some cheese slices and the hotdog. I scrambled some eggs too and I was then a happy camper.

Today's Meal

I have been busy lately that I could not cook a very nice dinner. I can only make quick meals for hubby and me. So tonight we had pork chops which I baked with shake and bake mix. Some hot links which are my favorite. We had baked potatoes and a can of green beans. Easy to prepare meal and taste good too.

Look what I've got! Chinese buns which I craved for a long time. It is a Philippine product but packed here in US. These taste really good that you want to eat more. One piece is enough though because of its perfect size which is good for one person. This pack has 4 buns in it so you'll have enough to answer any craving like mine. Pinoy Breakfast

It was after my Dr's appointment when hubby and I dropped by the Filipino store. It was still early that the store was closed but the restaurant was open. So we checked it out and look what I've got. I had delicious garlic rice and noodles with fried squid, fish and fried dried fish. Feels like I had breakfast at our Philippine breakfast nook. I really miss food like this, it brings back all the memories.
