Ham and Potatoes Au Gratin

This is another recipe for your Thanksgiving left-over Ham. This would be only good once in a while because it is creamy and loaded with fats unless if you choose to use non-fat milk and cheese. But still it has butter so just eat less OK? My husband liked it but I don't want to prepare this always for dinner. Maybe once in a year because I am not used to eat ham with creamy sauce.
2 cups potatoes, peeled and cubed
1 cup diced cooked ham
1 tablespoon minced onion
1/3 cup butter or margarine
3 tablespoons all-purpose flour
1 1/2 cups milk
1 cup shredded Cheddar cheese
3/4 teaspoon salt
1 dash white pepper
Chopped fresh parsley

Combine potatoes, ham and onion in a greased 1-qt. casserole; set aside. In a saucepan, melt butter over medium heat; stir in flour until smooth. Gradually add milk; stirring constantly until mixture thickens and bubbles. Add cheese, salt and pepper; stir until the cheese melts. Pour over potato mixture and stir gently to mix. Bake at 350 degrees F for 35-40 minutes or until bubbly. Garnish with parsley.
