Lasagne Belmonte

Each region of Italy seems to have its own variation of the lasagne casserole. This one, using tomato and beef sauce with three flavorful cheeses, closely follows those found in the southern section. You will like this taste for my husband and I like it so much. We even ate the baking dish of it within a week, just the two of us and nothing has been wasted. I got this recipe from my recipe book, "Recipes for Ground Beef and other ground meats." I used the Spicy Lasagne Variation which is a substitution of 1/2 lb mild Italian pork sausage for 1/2 lb of the beef. If you'll use this variation, be sure to remove the sausage casing, chop it and brown with the beef.

1 medium-sized onion, chopped
3 tbsps olive oil or salad oil
1 1/2 lbs lean ground beef
1 clove garlic, minced or mashed
2 cans (8 oz. each) tomato sauce
1 can (6 oz.) tomato paste
1/2 cup each dry red wine and water (or 1 cup water)
1 tsp each salt and oregano leaves
1/2 tsp each pepper and sugar
12 ounces lasagne noodles
Boiling salted water
1 lb (2 cups) ricotta cheese or small curd cottage cheese
1/2 lb mozzarella cheese, thinly sliced
1/2 cup shredded Parmesan cheese

In a large frying pan over medium heat, saute onion in oil until soft; add beef and garlic and cook, stirring, until meat is brown and crumbly. Discard any fat. Stir in tomato sauce, tomato paste, wine and water. Add salt, oregano, pepper and sugar. Stir until mixed. Cover pan and simmer slowly about 1 1/2 hours.

Meanwhile. cook noodles in boiling salted water until tender as directed on package (about 15 minutes). Drain thoroughly, rinse with cold water and drain again. Arrange about 1/3 of the noodles in the bottom of a 9 by 13-inch shallow casserole dish by crisscrossing noodles. Spread 1/3 of the tomato sauce over the noodles; top with 1/3 of the ricotta and mozzarella cheeses. Repeat this layering two more times. Top with the Parmesan cheese.
Bake, uncovered, in a 350 degree oven for 30 minutes or until bubbly. Makes about 6-8 servings.

Green Bean Casserole

I always love green beans that is why I like this green bean casserole so much! Aside from the good taste, this is easy to prepare too. A perfect side dish for the holiday! You should try this and enjoy eating these green beans. I got this recipe from Southernfood/About.com.

1 can (10 3/4 ounces) condensed cream of mushroom soup
4 cups cooked green beans
1/8 teaspoon pepper
1/2 cup milk
1 1/3 cups French fried onions
Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned. Serves 6.

See's Fudge Candy

Enjoy this copycat recipe of See's Fudge Candy but watch out for the calories. See's candy is my hubby's favorite. He used to send me a big heart of See's candies when I was still in Philippines and until now, he keeps giving me these candies. This is popular here in USA but I haven't heard it before. I even searched for it in our local stores in Philippines but I couldn't find any. Here's a recipe now so you can try it too if there's no See's Candies in your area. I like the fudge and the dark chocolate coated almonds. You might want to try this. Below is the recipe.

4 1/2 Cup Sugar
3 Packages Chocolate chips (12 Ounces each)
1/2 Pound Margarine
1 Teaspoon Vanilla
1 can Evaporated milk
7 Ounces Marshmallow cream
2 cups Nuts

Mix 4 1/2 cups sugar with one (1) can evaporated milk. Boil 7 to 8 minutes,
stirring often. (rolling boil) Mix together in a large bowl; 3 packages
chocolate chips, 7 oz. jar marshmallow cream, 1/2 lb. melted margarine.
Cream margarine and marshmallow together and add chocolate chips. Pour hot
mixture over chocolate mixture. After chocolate has melted, add 2 cups of
nuts and 1 tsp. of vanilla, blend well, pour into buttered pans and chill in
refrigerator. Cut into squares before firm.
This recipe makes about 5 lbs of fudge.

Ruby Tuesday Apple Pie

This is a copycat recipe for Ruby Tuesday Apple Pie from the Top Secret Insider's Edition recipe book. It has always been a tradition for Sharon's Mom to bake a pie every Thanksgiving so last time, we had this apple pie. It tasted good as always. I would try to make one someday. Though I am not really a fan of apple pies but I want to try it. My favorite is pecan pie but I still eat other pie flavors. Enjoy this recipe!

1 (9−inch) frozen deep−dish apple pie (double crust or
1 stick Butter
1 Cup Light Brown Sugar
3 1/2 tsp. Cinnamon
1/4 tsp. Allspice
1/4 tsp. Ground Clove
1 1/2 tsp. Lemon Juice
3/4 Cup flour
1/2 Cup sugar
10 Tbsp. frozen butter
1 1/3 Cups chopped walnuts
Ice cream (optional)

Let pie thaw at room temperature for 30 to 45 minutes.
Preheat oven to 350 degrees. In a small saucepan, melt the stick of
butter over medium heat. Add 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon,
allspice, cloves and lemon juice. Stir until well blended and sugar is
melted, about 3 minutes. Make an X in the center of the top crust of the
pie and fold back the crust.
Pour the butter mixture evenly into the pie and then replace the crust.
Leave 4 vent holes, sealing the rest of the pastry.
Bake for 30 minutes.
Remove from the oven and set aside. Reduce heat to 325 degrees.
Grate frozen butter into a medium−sized bowl. Toss the grated butter with
flour, remaining sugars, remaining cinnamon and walnuts.
Carefully wrap an aluminum foil band around the edge of the pie,
creating a lip to hold topping. Sprinkle topping evenly over pie.
Bake for 30 to 40 minutes. Let rest for 10 minutes then
serve with ice cream, if desired.

Entenmann's Fat Free Chocolate Cupcakes and Hostess Cupcakes

These are copycat cupcake recipes from the Top Secret Insider's Edition recipe book. On the picture were my friend Isahdora's cupcakes. She made and brought some to our Christmas party. Too bad for me because I haven't tasted it but I am pretty sure her cupcakes were delicious. The kids loved it and I bet my husband will like it too. I was about to bring some home for him but I forgot. I just ask her to make again next time and I asked her also of the recipe. Enjoy the sweetness of your baked cupcakes then.

Entenmann's Fat Free Chocolate Cupcakes

1 small Box Jello cook & serve, chocolate pudding powder
1/2 cup Non−fat dry milk powder
1 tablespoon Unsweetened Hershey's cocoa
1/2 cup Sugar
1 cup Self−rising flour
4 Egg whites, beat til stiff with 1 pinch Salt in 1−1/2 qt. bowl
1 teaspoon Vanilla
4 ounces Applesauce
1/4 teaspoon Baking soda

In medium mixing bowl combine Jello powder, dry milk, cocoa,
sugar and flour. Set aside. With electric mixer, beat alternately
into the egg white mixture a cup at a time with the vanilla,
applesauce and baking soda, which have been mixed together.
Beat 2 minutes after last addition. Divide batter equally between
12 paper−line cupcake wells. Bake at 350 degrees about 18−20
minutes or until tester comes out clean. Cool in pan on wire rack
10 minutes then remove.

Hostess Cupcakes

1/2 c Plus 2 tbsp Flour
2 1/2 tb Cocoa powder
3/4 ts Baking soda
1/4 ts Salt
1/2 c Sugar
1/2 c Water
3 tb Vegetable oil
1 1/2 ts Distilled white vinegar
1 ts Vanilla extract

1 c Heavy whipping cream
6 oz Finely chopped white chocolate

3 oz Finely chopped bittersweet chocolate
3 tb Boiling water

1 tb Egg white, at room temperature
1 pinch cream of tartar
1/2 c Plus 2 to 3 tbsp confectioner's sugar

Make the cupcakes:
1. Position a rack in the center and preheat oven to 325F. Lightly
butter twenty−four 1−3/4" x 3/4" (1−oz) muffin of biscuit cups.
2. Into a medium bowl, sift together the flour, cocoa, baking soda,
and salt. Mix in the sugar. Make a well in the center. Whisk in the
water, oil, vinegar, and vanilla. Blend until smooth. (The batter
will be very thin.)
3. Spoon the batter into the prepared cups. Bake until a cake tester
inserted into the center of one of the cupcakes comes out clean,
about 12 to 14 minutes. Cool the cupcakes in the pans on a wire rack
for 5 minutes. Remove the cupcakes from the pans and finish cooling
on the rack.

Chicken Macaroni Salad

This chicken macaroni salad is so good. You should try it and serve it on your holiday dinner table. My friend Grace made this and she brought it to our Christmas party. I liked it that I even brought some home. My husband liked it so I would try this for our Noche Buena (midnight of December 24th).

1 lb macaroni noodles
3 pieces fresh carrots
1 big chicken breast
500 ml mayonnaise
1 (836 g) can pineapple chunks
1 big white onion, finely chopped
1/2 cup sweet pickle relish
3 hardboiled egg, diced
1 cup cheddar cheese cube
1/2 cup raisins

Cook macaroni noodles according to package cooking instructions.
In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
Drain carrots and let cool. Peal skin then dice.
Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths.
Drain pineapple chunks or tidbits.
Combine all ingredients while adding salt and pepper, to taste.
Refrigerate, then serve.

Hash Browns for Breakfast

These are hubby's hash browns. We made some one early morning and I helped him cook it. His hash browns are crispy and not mushy. I let him grate the second potato because he didn't want my way of grating it. He wanted long like julienne while mine was short and so fine. But he fried the hash browns and I just fried the rest of the food for our breakfast. It was delicious and crunchy. The food we ate was the same with the food we usually order when we dine out. So this time around, we have saved.
3 cooking oil
2 pcs potatoes, peeled and grated
Salt and pepper

It is easy to prepare. Just peel and grate the potatoes according to the desired size. Rinse and pat dry using a paper towel. Heat pan with oil on medium-heat high. Add the grated pieces of the potatoes on the pan forming a patty. Fry for a few minutes and flip when it's golden brown already, do the same on the other side. Serve with your favorite breakfast sausages and eggs.

Eggplant Dishes

Eggplant has been one of my favorite vegetables. For me, this vegetable is easy to prepare and cook. I can add eggs with it, vinegar or soy sauce. One day, I came up with three eggplant dishes which I like. These were the eggplant salad, sauteed eggplant with eggs, and fried eggplant with eggs. I ate a big plate of rice because the eggplant salad was really a good appetizer. I didn't eat much of the sauteed eggplant since I ate a lot of the fried eggplant already. That's my favorite! I plan to make Adobong talong or Eggplant Adobo which is cooked with coconut milk. It tastes good. I will share the recipe soon after I try cooking it myself.

Fruit Salad

There are a lot of variations for fruit salad. You can prepare mixed fruits with just a whipped cream or table cream on it or sprinkle it with lime juice and salt. My preparation is different because I add avocado cubes with condensed milk and table cream or all purpose cream. In Philippines, we eat avocado with sugar or condensed milk. People here find it odd and disgusting. I was even surprised when I came here and found out they eat it with tomatoes and spices. I understand how they feel but I encourage them to try avocado in fruit salad and in smoothies or shakes. My husband didn't want to try it at first but when I made a shake for him, he liked it that up to now, he eats every avocado dessert that I make. Recently, I made fruit salad with tropical fruits, apple, banana and avocado. It was yummy and sweet.

I just mixed the sliced apples and avocado cubes with tropical fruits (in can) and added the table cream and condensed milk. You may also add colored marshmallow so it will be colorful and attractive. If you add avocado and bananas, be sure to eat it right away because the color and taste will change if you let it stay in the fridge for more than a day.

Pineapple Upside Down Cake

Sharon's Mom prepared this pineapple upside down cake last Thanksgiving. It has been a tradition of her family to have this cake as a dessert every Thanksgiving. The same delicious cake that has been baked last year. I like the sweet taste of the pineapple added to the cake. It is so tempting! Try this recipe and you'll love it.

1 cup of firmly packed dark brown sugar
1/2 cup unsalted butter
1 can (20 oz) of pineapple slices

1 1/2 cups all purpose flour
6 Tbsp cake flour
6 Tbsp of ground almonds (from about 2 oz of whole almonds)
3/4 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups of sugar
1 cup (2 sticks) unsalted butter at room temperature
4 large eggs
3/4 teaspoon vanilla extract
3/4 cup sour cream

1 Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer ontop of the caramel mixture.

2 Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.

3 Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

Makes 12 to 14 servings.

Green Beans as a Side Dish

I posted a while ago about Zingo's Cafe green beans as a side dish. And I made my own recipe for this that is similar to it but more tasty. Maybe it is because I used seasoned diced tomatoes, chicken bouillon cube and more vegetables like bell pepper and onion. Here's my recipe. Note: if you are using chicken bouillon, salt is not anymore needed but you can still add if you want it a bit salty.

1/2 lb green beans, cut in 1-inch pieces
1/4 pc green or red bell pepper
1 onion
1 can diced tomatoes with basil, oregano and garlic (you may use fresh tomatoes)
1/2 cube chicken bouillon
1 cup water
salt and pepper(optional)
In a saucepan, boil water with onion, green pepper. When it boils, add green beans and the rest of the ingredients. Simmer for a few minutes till green beans are tender. Stir occasionally. Serve with your favorite meat dishes or with rice.

Looking at the picture makes me remember my husband and I having a nice and a relaxing vacation in Philippines. It has been a while that we went to a beautiful place and enjoyed the things that nature has offered. Recently, we went to the beautiful Pismo Beach and witnessed the sun setting down. It was so romantic in a wonderful place. We never planned that trip but we made it there. My husband and I always do spontaneous things. Imagine, we went to Yosemite Park which is almost 7 hours drive from our place without planning to go there. We even didn't have things, no clothes, shoes for trekking and personal things yet we stayed for two days there. It was after my AOS interview in Fresno when we headed to Yosemite. Just like our Pismo Beach trip, it was fun though. We also went to Modesto and almost missed the train because we didn't know the schedule. We just went there right away when my husband thought of something that we needed to do in Modesto. The trip again was memorable.
I am sure it is not only us who have done or love to do things spontaneously. I just wish that my husband will bring me to a place which is not cold and surrounded by crystal blue water. He has mentioned before that he wanted to go to Philippine islands every winter for a vacation because it is too cold in here. I wish he can leave his work for the main time. But if he really can do it then I will be more happy. Someday, it will happen but at times like this when business is not so good, I doubt it. We need to work hard to earn and save money for our future. Dipped and Whipped Dessert

These are actually brownies which are dipped in chocolate pudding and with whipped cream. My husband named it Dipped and Whipped Brownies. I baked brownies one day and I was surprised when he made this. It was my first time to try it and it was good. It was addicting and I kept on eating that I was not worried of the fats. My hubby always tempts me after dinner to have desserts. Well, a piece is not that bad but too much of something is not good. I'll have a piece next time then. By the way, I used fudge brownies mix which you can buy in stores. It comes in a package. Tastes good and easy to prepare.

Zingo's Cafe and Disney Mickey's Meatloaf

This was Zingo's Cafe special dinner plate of meatloaf. It has a choice of potato side dish, vegetables and rolls. I don't like much mashed potatoes so they gave me two vegetable side dish which was green beans. I liked it but I will share with you my green beans recipe that tastes similar to this and which I like better. Their meatloaf tasted good but I don't know its recipe. I have this Insider's version of the Disney Mickey's Meatloaf instead.
2 lbs ground beef
1 lb ground pork
1−1/2 onions, diced
1/8 Teaspoon garlic, granulated
2 cups bread crumbs, fresh
2/3 cup cold water
1/8 Teaspoon thyme
1/4 cup parsley, chopped
1 whole egg
1 Teaspoon Worcestershire sauce
1/8 Teaspoon salt

Soak bread crumbs in cold water and set aside. Saute diced onion until
tender. Set aside and allow to cool. Pre−heat oven to 350 degrees. In a
large bowl, combine ground beef, ground pork, onions, granulated garlic, and
bread crumbs mixed with water. Mix well and add remaining ingredients. Mix
well and mold into loaves. form in either loaf pans or a meat pan with sides
high enough to hold juices. Bake for 45 minutes to 1 hour.

Ginisang Talong/Sauted Eggplant

Ginisang Talong or Sauteed eggplant is one of my favorite eggplant dishes. I have cooked this many times here in USA and as usual, only me can eat it all. My husband doesn't like much eggplant but he always try my dishes. He told me that last time he ate an eggplant dish was when he was a kid. As for me, I got used with its taste because we once had a vegetable garden at our backyard and we had plenty of eggplants. So every time there was no food to eat, we just took some eggplants from the backyard and cooked it. And this is one of my specialties, eggplant sauteed with garlic, onion, tomatoes and red bell pepper. See eggplant and egg and eggplant salad recipes too.

1 eggplant, sliced lengthwise and cut in 1-inch pieces
2 eggs
2 cloves of garlic, minced
1 onion, in thin wedges
1 green onions (separate the white part or the part near the roots)
1 tomato
1 red bell pepper, julienne
3 tbsp soy sauce (add more if necessary)
salt and pepper (optional)
1 tbsp cooking oil

Saute garlic for 15 seconds in hot cooking oil on medium-high heat. Add onion, green onion (white part) and red pepper. When vegetables are crisp-tender, add the eggplant, stir and cover for 2-3 minutes, stirring occasionally. Add soy sauce and pepper. Stir. Cover and heat for another minute. Add the eggs and mix it with the other ingredients. When eggs are cooked, the dish is ready to be served with rice. Garnish with green onion.

Fried Eggplant and Egg

Eggplant and egg is one of my favorite eggplant dishes. I am not sure but I think we call it Tortang Talong too. It is easy and quick to prepare too. All you have to do is grill the eggplant first then cook it with eggs mixed with onions, red pepper, tomatoes and green onions. You can prepare two small eggplants for one egg. Since we have a bigger size of eggplants here, I sliced the eggplant into 4 pieces lengthwise and grilled it. I cooked only one slice for this and I used the other slices for eggplant salad and ginisang talong or sauted eggplant. This can be eaten for breakfast or dinner. My husband won't eat this for breakfast because he only eats eggs without onions and bell pepper. If it has vegetables in it then it is best served for dinner. But I do eat it anytime in any day with rice.

Grilled eggplant

tomatoes (I used diced tomatoes with olive and garlic in cans)

green onions
red bell pepper
1 egg
1 tbsp cooking oil
salt and pepper (optional)
Beat the egg and mix well all ingredients except the grilled eggplant.
Add the eggplant and press it using a fork so the egg mixture will be absorbed.
Fry in hot cooking oil on a pan. Pour the egg mixture on top of the grilled eggplant if you are only using one slice of it. If two slices of eggplants are used, you can divide the egg mixture in two and frying is done twice.
