Pakbet (Ilokano)

Pinakbet or Pakbet is a popular Pilipino dish from the northern region of the Philippines called Ilocos. It's where Mrs. Imelda Marcos' husband came from. The origin of the word is "pinakebet"...all shrivelled. The authentic Ilokano recipe calls for bagoong (fermented fish sauce), and ampalaya (bitter melon). Below was a Pakbet dish cooked by a friend Violy. This is her recipe and hope you like it. My husband doesn't eat salted fish but he has tried this and liked it. He didn't know that there was salted fish added, he thought it was all vegetables and soy sauce. If he knew, I bet he would never try to taste it LOL Below is the recipe. You may add 2 or more of each vegetable below according to your desired taste.

Bittermelon (ampalaya)
String Beans
Sweet Potatoes
Pork Spare Ribs or any pork meat with bones (you may use strips of pork)
Salted Fish (Bagoong)
Salt to taste
1 cup water (optional)
garlic, minced
You may add squash

1) In a deep saucepan, saute tomatoes, minced cloves of garlic, and slices of medium onion.

2) Add pork. Cook until tender. Then add salted fish and water.

3) Add all sliced vegetables and stir. Simmer until shrivelled. Serve on rice.
