Sinigang Na Baboy (Pork In Tamarind Soup)

I guess, this couldn't be called Pork in Tamarind Soup, instead, Pork in Lemon Soup :) Thanks to Rose for the recipe and I'm puting it now into writing;)

We didn't have tamarinds at that time but at least we used the Tamarind mix. Lemons are the best substitute for this if there are no tamarinds available. It still tastes good. Sinigang na Baboy is one of the favorite dishes that Filipinos love.

Here's what you need: Note that the number/measurement of ingredients depend on your desired taste.

Pork Meat (best with bones)
Tamarind Mix ( No need to use salt if you use this)
String Beans
Pechay or Greens (Spinach, Cabbage etc)

Cooking Instructions:

1. In a pot, put the meat and add water. Let it boil for 5 minutes and change the water. This is to get rid of the fat.

2. When water is changed, let it boil again. Simmer up for at least 1 1/2 hrs until the meat is tender.

3. Then add lemon juice, sliced onions, tomatoes, whole jalapenos, string beans and the tamarind mix. Stir.

4. When the string bean is cooked, add the pechay or greens. It will only take a few seconds to cook the greens, don't overcook it.

5. Remove from the stove and serve with hot rice.
